My cousin (by marriage) asked me to help her out with a Christmas gift for the two gals that were her Bible Study leaders this fall. Our church offers a few different Bible studies so while I was going through part three of four of Revelation she was taking a class about adversity. The two leaders have faced great adversity and through God's amazing grace and strength He brought them through. My cousin wanted to encourage them with a gift of prayers from the study that they could reflect on each day. I asked Rachel for her expert advise and together we worked on the book of prayers on our play day.
Owen was in rare form that day and happy as a clam. He is getting around and was quite intriqued by Mr. Dale working in the new kitchen. Mr. Dale had the day off and treated us ladies by making us a pizza for lunch as well as some Cowboy Caviar. Yum Yum!
Cowboy Caviar
1 can each: Black eyed peas - Drained and Rinsed
Black Beans - Drained and Rinsed
Pinto Beans - Drained and Rinsed
White corn - Drained
Small can - diced Green Chilies - Drained
1 Cup each: Diced Red Onion
Diced Green, Red Or Yellow Bell Peppers
Mix together and add: 3/4C apple cider vinegar OR 1 Cup White Vinegar (this is my preference)
1/2 Cup Oil
1 teaspoon salt
1/2 teaspoon black pepper
1 Cup Sugar
Marinate for at least 6 hours then drain and serve with tortilla chips. I usually make mine and let it marinate over night.
