Christi's Creative Crew: Raspberry Season

Raspberry (and strawberry) season holds a lot of memories for our family

When Dale was growing up his dad owned a large parcel of land right in the city limits, and he was a MASTER GARDENER. Weeds didn't even dare to grow in his garden!

They not only grew strawberries and raspberries, they had corn on the cob (and so much more) that Dale would pedal to all the neighbors, selling all sorts of fruits and vegetables. I think they sent him to sell the produce because he was so darn cute!! And who could resist his cuteness??

Sales from this garden would fund the family vacation to a cottage every summer where they bonded and still hold fond memories of.

As the years went by and our little city began to grow, Dad Waite sold off a ton of the land because he could not afford the taxes on this large section which included a corner lot.

As a family we still were able to get all the berries and veggies that we needed, but he no longer sold them to the community. (as a little girl I remember my mom purchasing the berries from Dale's dad because they simply were the best around)

As Dad Waite got older and his garden got smaller, and the need to sell the homestead came up (after Mom Waite passed). When the new owners sold the house several years later we asked if we could take a walk through the house for memory sake, and they were happy to allow it. Not only that, but he said that there were some remaining raspberry plants and he had no clue what the next owners would do with them so he told us to feel free to dig up some raspberry shoots for our own garden.

We kept those raspberry plants going for 11 years and when it was time to sell and go into a condo (no garden there) our son, Jeff, took some shoots from our plants and now has them growing in his garden. 5 years later when we found ourselves in a house again, one of the first things we did was to dig up some shoots from Jeff's garden and plant them here. Dad Waite's raspberries are still living on!

Here is my favorite Raspberry Recipe straight from my mama's recipe files

RASPBERRY RIBBON PIE

Blend together, then fold in the whipped topping

1/2 package cream cheese softened (4 oz)

1/3 C Powdered Sugar

1tsp vanilla

dash of salt

1 C shipped topping (my mama always bought Dream Whip and whipped her own, but I just use Cool Whip)

Dissolve and then add frozen berries Chill until partially set

1-1/4C water

1- 3 oz pkg raspberry jello

1/4 C sugar

1 T lemon juice

10 oz frozen raspberries

Spread 1/2 of the cream cheese mixture on the bottom of your baked pie shell, Cover with 1/2 of the chilled raspberry mixture. Repeat. Chill until set.
