I wanted to share a sweet card, a sweet treat and a sweet gift that I received.

My sweet card comes from Marcia who comes to my Tuesday classes, but has been absent for over a month while she recovers from knee surgery. It was so good to have her back.

My sweet gift comes from another Tuesday stamper, Gina. Gina saw my FB post about the Pillsbury Doughboy, and she brought me these salt & pepper shakers! I love them! they made me squeal!!

My sweet treat also comes from Marcia who wanted to treat everyone on her first day back
It was perfect because I didn't have anything made to share with everybody!! I love the timing!
Everyone loved them!

I bet you are curious what I meant by my facebook post so here you go...

"My FB Friend Christi Wroe is a fabulous baker! She shares the most amazing baked goods and everything she does, she does with elegance. She has this darling little Pillsbury Dough Boy that shows up in all of her creations.
Oh how sweet he is and I was longing to get one just like it so that this Christi could be just like my new friend, Christi. (we met because our names are spelled the same which is fairly rare)

That little dough boy was well out of my reach, but I found a sweet baking Snoopy, which to me, is the next best thing - I love my Snoopy!

I baked up some Easy Skinny Strawberry Oatmeal Bars and Snoopy was right there with me!"

Ingredients

  • 7 Tablespoons light brown sugar
  • dash of salt
  • ¼ teaspoon ginger
  • ¼ teaspoon cinnamon
  • 1/2 teaspoon vanilla
  • 3/4 cup white whole wheat flour
  • 1 ¼ cup old-fashioned rolled oats
  • 7 Tablespoons melted coconut oil
  • 10 oz. diced strawberries
  • 1 teaspoon cornstarch
  • 23 teaspoons sugar
  • 1 Tablespoon fresh lemon juice

For the glaze:

  • ½ cup powdered sugar
  • 1 teaspoon vanilla
  • 2 teaspoon milk (or more )

Instructions

  1. Preheat the oven to 350 F and place the rack in the center position. Line 8 x 8 pan with parchment paper leaving an overhang the sides.
  2. In a bowl stir together brown sugar, cinnamon, ginger, salt, oats and flour. Add melted coconut oil and vanilla and stir to combine. The mixture should be evenly moistened and crumbly. Reserve about ¾ cup of the mixture for topping and press remaining mixture in the bottom of the pan.
  3. Scatter half of the strawberries, sprinkle with cornstarch, lemon juice and sugar. Scatter remaining strawberries and then sprinkle with remaining oatmeal mixture.
  4. Bake for about 40 minutes (until the topping gets nice golden color).
  5. Cool completely before serving.
  6. To make the glaze whisk the glaze ingredients until smooth. For thicker consistency add more powdered sugar or add more milk if you want to thin the glaze. Drizzle over the bars and serve.

And of course, the doughboy needed a baked good - some yummy cinnamon zucchini bread
This one is a classic but if you want the recipe - here you go...
Zucchini Bread (Classic) 
3 C Flour 
1 tsp salt 
1 tsp baking soda 
1 tsp baking powder 
3 tsp cinnamon 
3 eggs 
1 C vegetable oil 
1 ¼ C white sugar 
1 C brown sugar 
3 tsp vanilla 
2-3 C shredded zucchini 
Directions
Spray two 8x4 inch pans with non-stick cooking spray and preheat oven to 325ยบ 
MIX together flour, salt, baking soda, baking powder and cinnamon 
BEAT eggs, oil, vanilla, white sugar, and brown sugar together in a large bowl 
ADD dry ingredients to the wet mixture 
BEAT well. 
STIR in zucchini until well combined 
Pour batter into prepared pans 
BAKE for 50-60 minutes and let cool completely.

My Personal Tip: I line the bottom only of my bread pans with a piece of parchment paper, spray it with cooking spray, sprinkle a cinnamon sugar mixture on that before you add your batter.

Makes for easy release and the added cinnamon-sugar makes it extra yummy

I let it set 10 minutes before I release the loaf onto a cooling rack.
